SENSORY TASTING REPORT

Knowledge of the environment and the varieties allows Lo Canetà to produce this organic “MIXTISQUE” EVOO. As its name suggests, it is the combination of different autochthonous varieties.

This is a very personal EVOO, with a pleasant fruity rich in green notes and where the stem, the olive leaf, the tomato plant, the thyme, and the rosemary flower predominate.

In the mouth, the variety of varieties allows to create a silky oil, with a green entry, slightly bitter nuances and a somewhat timid spice that is present and that will give us play in the pairings.

After tasting it several times, the green notes are greater than artichoke and some mature hint also appears in the aftertaste. This is a great EVOO, harmonious and balanced, ideal for creams, seafood, or white meats.
