Sardines confit in olive oil infused with rosemary

CLEAN THE SARDINES
Leave the loins without bones and wash them with cold water
PREPARE A BRINE
In a container, prepare a liquid brine with 100 g of salt and a liter of water. This process has two purposes: salt the fish more evenly and that the fish release any blood that it may still have
HEAT THE OLIVE OIL CANETÀ
At 65o in a saucepan heat the ecological oil of this variety. Add the peppercorns, rosemary and a crushed garlic
MAKE THE CONFIT
After an hour remove the sardines in brine and dry them well with absorbent paper. Then confit them for 5 minutes.
HOW TO PRESERVE THEM?
You can keep them in this same oil and, little by little, use it for different preparations
